In my kitchen, from-scratch cooking means preparing our soups, sauces, sides, and proteins in-house. While we occasionally use pre-made items when time requires it, we rely primarily on fresh preparation. Because we control each step, we protect both flavor and quality.
Moreover, fresh ingredients directly support resident health. They provide higher concentrations of essential nutrients, vitamins, and antioxidants. In turn, this approach strengthens immune systems and promotes long-term wellness. Freshly prepared meals also taste better, which encourages residents to eat well and maintain energy.
I adapt from-scratch meals to meet senior-specific needs and preferences in thoughtful ways. For example, we often cook foods longer to achieve a tender texture. Additionally, we use moist cooking methods so meals remain easy and enjoyable to eat. These techniques ensure comfort without sacrificing flavor.
At the same time, we balance comfort foods with fresh, healthy options. While familiar entrées remain favorites, we pair them with nutritious sides. Furthermore, our always-available menu offers lighter options. This way, residents can enjoy both comfort and balance.
One standout resident favorite is our homemade lasagna. Not only is it prepared entirely from scratch, but it also carries special meaning. A resident generously shared the original recipe, and we thoughtfully adjusted it for large-batch preparation. As a result, the dish feels both personal and communal.
Ingredients
10 lbs. lean ground beef
10 lbs. Italian sausage
1 #10 can crushed tomatoes
1 #10 can tomato sauce
¼ cup Italian seasoning
¼ cup roasted garlic
2 cups diced onions
10 lbs. small-curd cottage cheese
1 cup liquid egg
2 tbsp salt
1 tbsp pepper
5 lbs. mozzarella cheese, shredded
4 cups Parmesan cheese
Lasagna noodles
Instructions
First, brown the ground beef and sausage. Then add onions and cook until translucent. Next, stir in roasted garlic and Italian seasoning.
After that, add crushed tomatoes and tomato sauce. Simmer for 2 hours. Allow the sauce to cool to room temperature.
Meanwhile, mix cottage cheese, liquid egg, salt, and pepper in a separate bowl. Combine mozzarella and Parmesan in another bowl.
Next, layer lasagna noodles, meat sauce, cottage cheese mixture, and cheese blend. Repeat layers to fill a hotel pan.
Finally, preheat the oven to 350°F and bake for approximately 1½ hours.
